Instructions
- Heat heavy cream in a saucepan over medium heat until it simmers. Remove from heat.
- Pour hot cream over chocolate chips in a bowl and let sit for one minute. Stir until smooth.
- Mix in soft butter and extract until well combined.
- Cover the mixture with plastic wrap and refrigerate for about two hours or until firm enough to scoop.
- Scoop out the ganache using a melon baller and roll into smooth balls.
- Optionally, tint some truffles with food coloring and roll half in cocoa powder and half in sprinkles.
