Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups kale (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1 cup carrots (shredded)
  • 1 cup plain yogurt
  • 3 tablespoons tahini
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. 1. Cook the Quinoa: Rinse quinoa under cold water. Boil 2 cups of water in a saucepan, add quinoa, and simmer for about 15 minutes until fluffy.
  2. 2. Prep the Veggies: While the quinoa cooks, chop the kale, halve the cherry tomatoes, dice the cucumber, and shred or julienne the carrots.
  3. 3. Make the Tahini Yogurt Sauce: In a small bowl, combine yogurt, tahini, lemon juice, salt, pepper, turmeric, and ginger.
  4. 4. Assemble Your Bowl: Spoon cooked quinoa into bowls. Layer with kale, tomatoes, cucumber, and carrots.
