Instructions

  1. Prepare the artichokes by trimming tough outer leaves and slicing in half lengthwise.
  2. In a mixing bowl, combine ricotta, 1 tbsp olive oil, and lemon juice; blend until smooth.
  3. Mix parsley, lemon zest, garlic, and remaining olive oil in a small bowl to create gremolata.
  4. Heat a skillet over medium heat with a splash of olive oil. Sauté halved artichokes cut-side down until golden brown (about 5-7 minutes).
  5. Spread whipped ricotta on a platter or individual plates and top with sautéed artichokes and gremolata before serving.
