  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ¾ cup panko breadcrumbs
  • ½ cup heavy cream
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, ricotta, garlic, Italian seasoning, breadcrumbs, salt, pepper, Parmesan, and lemon juice until combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Bake for 25-30 minutes until golden brown and cooked through.
  5. Meanwhile, heat heavy cream in a saucepan over medium heat. Add spinach until wilted and season with salt, pepper, and additional Parmesan.
