  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or melted butter)
  • ¼ cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with grease or liners.
  2. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, oil, milk, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Fill each muffin cup two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
