  • 2 lbs beef stew meat
  • 1 medium yellow onion, chopped
  • 8 oz fresh mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp flour or cornstarch (for thickening)
  • Salt and pepper to taste
  • Cooked egg noodles or rice for serving

Instructions

  1. Prep your ingredients by chopping the onion and slicing the mushrooms.
  2. In a skillet over medium-high heat, brown the beef stew meat until a crust forms.
  3. Transfer the browned beef to the slow cooker and add onions, mushrooms, garlic, broth, Worcestershire sauce, and Dijon mustard. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  5. About 30 minutes before serving, stir in sour cream mixed with flour or cornstarch until smooth.
  6. Serve over cooked egg noodles or rice, garnished with fresh parsley if desired.
