Ingredients

Scale
  • 2 cups shredded beef (chuck roast)
  • 2 tablespoons birria spice mix
  • 1 cup sharp cheddar cheese (shredded)

  • 1 cup consomé (beef broth)

Instructions

  1. Season beef with salt and pepper, then sear in oil over medium-high heat until browned on all sides.
  2. Blend soaked chilies, garlic, cumin seeds, oregano, and vinegar until smooth; add to the pot with water/broth. Simmer covered for about 3 hours or until tender.
  3. Shred the beef and return it to the pot along with some broth.
  4. Assemble sandwiches with shredded beef and cheese between slices of bread; grill in butter until golden brown.
  5. Serve hot with consomé for dipping.
