  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves fresh garlic
  • 1 medium onion, chopped
  • 1 tsp Mexican oregano
  • 8 crispy corn tortillas
  • 1 cup fresh cilantro, chopped
  • 2 limes, cut into wedges

Instructions

  1. Prepare the Marinade: Remove stems and seeds from guajillo and ancho chiles. Toast lightly in a skillet until fragrant.
  2. Blend: Combine toasted chiles with garlic, onion, oregano, salt, pepper, and water in a blender; blend until smooth.
  3. Marinate: Cut beef into chunks and coat with marinade; refrigerate for at least 2 hours or overnight.
  4. Sear: In a large pot, heat oil over medium-high heat. Brown marinated beef in batches.
  5. Slow Cook: Add remaining marinade and enough water to cover meat halfway; simmer for about 3 hours until tender.
  6. Crisp Tortillas: Fry corn tortillas in hot oil until crispy yet pliable—about 30 seconds per side.
  7. Assemble: Serve tostadas topped with shredded birria meat, cilantro, and lime juice.
