  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup whole wheat breadcrumbs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 large egg (or 1 tbsp flaxseed meal mixed with 3 tbsp water for a vegan option)
  • Salt and pepper to taste
  • 4 whole grain or gluten-free burger buns
  • Toppings: lettuce, tomato slices, avocado

Instructions

  1. In a large bowl, mash the black beans lightly with a fork.
  2. Sauté chopped onions in olive oil over medium heat until golden brown.
  3. Stir in cumin and chili powder; then add the mashed beans, breadcrumbs, garlic, salt, pepper, and egg/flaxseed mixture. Mix well.
  4. Form the mixture into four patties about half an inch thick.
  5. Preheat grill or skillet over medium-high heat. Cook each patty for 5-6 minutes per side until crispy.
  6. Assemble burgers on buns with desired toppings and serve warm.
