  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups fresh blueberries
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)
  • ½ tsp cinnamon
  • 1 cup rolled oats

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  2. In a saucepan over medium heat, cook fresh blueberries until they release their juices (about 5 minutes). Set aside.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and mix well.
  4. Add sour cream, vanilla extract, and eggs one at a time, mixing until just combined.
  5. Fold half of the cooked blueberries into the batter and pour over the crust.
  6. In another bowl, mix oats, flour, brown sugar, cinnamon, and melted butter for the crumble topping. Sprinkle over cheesecake along with remaining blueberries.
  7. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool at room temperature before refrigerating for at least 4 hours.
