  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 oz dark chocolate (70% cacao or higher), chopped
  • 2 cups fresh blueberries
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until combined. Press this mixture into the bottom and sides of a tart pan.
  2. Bake the crust for about 10 minutes until lightly golden. Remove from oven and let it cool.
  3. In a saucepan over low heat, warm heavy cream until it simmers. Pour it over the chopped dark chocolate in a bowl; let sit for one minute before stirring until smooth.
  4. Stir in cubed butter until fully melted and glossy.
  5. Pour the ganache into the cooled crust and spread evenly with a spatula.
  6. Top with fresh blueberries while the ganache is still warm, allowing them to settle slightly into the filling.
  7. Refrigerate for at least two hours or until set completely before slicing.
