  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (almond or peanut)
  • 1/2 cup chopped nuts (almonds or walnuts)
  • 1/4 cup seeds (chia or flaxseed)
  • 1/2 cup dried fruit (raisins or cranberries)
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, chopped nuts, seeds, cinnamon, and salt.
  3. In another bowl, combine honey (or maple syrup) and nut butter until smooth; pour over oat mixture and stir to coat.
  4. Grease a muffin tin and press about two tablespoons of mixture into each cup.
  5. Bake for 15-20 minutes until golden brown; let cool before removing.
