- 2 cups fresh broccoli florets

- Β½ cup mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp lemon juice (freshly squeezed)

- ΒΌ cup green onions, chopped
Instructions
- Cook the rotini in a large pot of salted boiling water until al dente (8-10 minutes). Add broccoli florets during the last 2 minutes of cooking.
- Drain the pasta and broccoli. In a bowl, whisk together mayonnaise, cheddar cheese, Dijon mustard, lemon juice, salt, and pepper until smooth.
- In a large mixing bowl, combine the warm pasta and broccoli with the dressing and fold in green onions until well coated.
- Cover and refrigerate for at least one hour before serving to allow flavors to meld.
