Description

Broccoli Cheddar Pasta Salad is a delightful mix of creamy cheddar, fresh broccoli, and perfectly cooked pasta, all coming together in a vibrant and comforting dish. Ingredients

  • 8 oz rotini pasta
  • 2 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • Β½ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • ΒΌ cup green onions, chopped

Instructions

  1. Cook the rotini in a large pot of salted boiling water until al dente (8-10 minutes). Add broccoli florets during the last 2 minutes of cooking.
  2. Drain the pasta and broccoli. In a bowl, whisk together mayonnaise, cheddar cheese, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. In a large mixing bowl, combine the warm pasta and broccoli with the dressing and fold in green onions until well coated.
  4. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
