  • 4 bone-in chicken thighs
  • 1 large sweet onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, sliced (any color)
  • 1 tsp fresh thyme
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 2 carrots, sliced
  • 2 cups low-sodium chicken broth
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients by chopping vegetables and rinsing the chicken under cold water; pat dry and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat; sear chicken pieces skin-side down for about 6-7 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté onions and garlic until fragrant and translucent (3-4 minutes).
  4. Add bell peppers, carrots, thyme, soy sauce, brown sugar, cayenne pepper, and chicken broth; bring to a gentle boil.
  5. Return the seared chicken to the skillet; cover and simmer on low heat for 30-35 minutes until tender.
  6. Before serving, drizzle lime juice over the stew and serve hot over rice or with vegetables.
