- 4 cups low-sodium vegetable broth
- 1 cup full-fat coconut milk

- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Peel and chop the carrots into small pieces. Dice the onion and mince the garlic.
- In a large pot over medium heat, add olive oil. Once hot, sauté onions and garlic until translucent (3-5 minutes).
- Add chopped carrots and grated ginger; cook for another 5 minutes until softened.
- Pour in vegetable broth to cover the vegetables and bring to a boil. Reduce heat to simmer for about 20 minutes until carrots are tender.
- Using an immersion blender, blend the soup until smooth (or transfer to a regular blender).
- Stir in coconut milk and season with salt and pepper. Heat gently until warmed through.
