  • 4 bone-in chicken thighs (skin-on)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine lime juice, minced garlic, chopped cilantro, cumin, paprika, olive oil, salt, and pepper to create the marinade.
  2. Place chicken thighs in a resealable bag or dish. Pour marinade over the chicken until well coated. Seal or cover and marinate in the fridge for at least 30 minutes (or overnight for best flavor).
  3. Preheat grill to medium-high heat (400°F) or oven to 425°F (220°C).
  4. Remove marinated chicken from the fridge and place on the grill or baking sheet. Grill for 7-8 minutes per side until internal temperature reaches 165°F (75°C) and nicely charred.
  5. Let the chicken rest for 5 minutes before serving with fresh lime wedges and additional cilantro.
