- 3–4 boneless, skinless chicken breasts
- 1 lb fresh asparagus
- 8 oz pasta (fettuccine or penne)
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Cook pasta according to package directions until al dente. Drain and set aside.
- In a skillet over medium heat, add olive oil. Once hot, add diced chicken seasoned with salt and pepper. Cook for 7-8 minutes until golden brown.
- Add minced garlic and chopped asparagus to the skillet; sauté for 3-4 minutes until fragrant and asparagus is bright green.
- Lower heat and stir in heavy cream and lemon juice; simmer for about 5 minutes until slightly thickened.
- Toss in the drained pasta and Parmesan cheese, mixing well to coat with the creamy sauce.
- Serve immediately, garnished with extra Parmesan cheese and cracked black pepper.
