  • 3 boneless, skinless chicken breasts (about 450g)
  • 2 ripe avocados
  • 4 slices sourdough bread
  • 1 cup fresh spinach leaves
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the chicken into bite-sized pieces and seasoning with salt and pepper.
  2. Heat a skillet over medium heat with a tablespoon of olive oil. Cook the chicken until golden brown and cooked through, about 7-10 minutes.
  3. While the chicken cooks, mash the ripe avocados in a bowl with a pinch of salt.
  4. Assemble the panini by layering one slice of sourdough with spinach, cooked chicken, mashed avocado, and cheddar cheese. Top with another slice of bread.
