  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime
  • Fresh cilantro, chopped (to taste)
  • 2 cups cooked rice or quinoa
  • Optional toppings: sour cream, guacamole, cheese

Instructions

  1. Prepare your ingredients: Chop the chicken into bite-sized pieces and slice the bell peppers and onion.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with chili powder and cumin; cook until golden brown (6-8 minutes).
