  • 4 boneless, skinless chicken breasts
  • 8 ounces cremini or button mushrooms, sliced
  • 3/4 cup dry Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper; dredge in flour.
  2. In a skillet over medium heat, melt olive oil and 2 tablespoons of butter. Cook the chicken for 4-5 minutes on each side until golden and cooked through. Remove from skillet.
  3. In the same skillet, add mushrooms; cook until browned (about 5 minutes).
  4. Pour in Marsala wine, scraping up browned bits; simmer for a couple of minutes.
  5. Add chicken broth, return chicken to skillet, and simmer for an additional 5 minutes.
  6. Stir in remaining butter until melted and glossy.
  7. Serve warm, drizzled with sauce.
