  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth

Instructions

  1. Trim excess fat from chicken breasts; pat dry.
  2. In a large skillet, melt butter over medium heat. Sear chicken for 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  3. Remove chicken; add minced garlic to the skillet and sauté for 30 seconds.
  4. Stir in heavy cream and scrape up brown bits from the pan.
  5. Add Parmesan cheese and lemon juice; mix until smooth.
  6. Cook rice according to package instructions using chicken broth instead of water.
  7. Return chicken to the skillet; simmer for 5 minutes.
  8. Serve on a bed of garlic parmesan rice, garnished with parsley.
