  • 34 boneless, skinless chicken breasts (about 1 lb), diced
  • 2 cups mixed fresh vegetables (bell peppers, carrots, broccoli)
  • 8 oz egg noodles
  • 3 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp sesame oil
  • 2 green onions, chopped

Instructions

  1. Prepare your ingredients: Chop the chicken and slice the vegetables.
  2. Cook the noodles according to package instructions until al dente; drain well.
  3. In a large skillet, heat sesame oil over medium-high heat. Sauté the chicken until golden brown (6-8 minutes).
  4. Add garlic and vegetables; sauté for another 3-4 minutes until vegetables are slightly tender.
  5. Mix soy sauce, brown sugar, cornstarch, and a splash of water in a bowl. Pour over the stir-fry while stirring continuously until well-coated.
  6. Add cooked egg noodles to the skillet; toss everything together for another minute before serving.
