  • 3/4 cup milk (or plant-based milk)
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  2. In another bowl, whisk together pumpkin puree, milk, eggs, vanilla extract, and melted butter until smooth. Gently combine the wet and dry ingredients.
  3. Preheat a non-stick skillet over medium heat. Let the batter rest for about 5 minutes.
  4. Pour about 1/4 cup of batter onto the skillet. Sprinkle chocolate chips on top.
  5. Cook until bubbles form around the edges (about 3-4 minutes), then flip and cook for another 3-4 minutes until golden brown.
