  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil (or melted butter)
  • ½ cup whole milk (or dairy-free alternative)
  • 1 tsp vanilla extract
  • ¼ tsp peppermint extract
  • ½ cup crushed candy canes (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, mix the eggs, oil, milk, vanilla extract, and peppermint extract until smooth.
  4. Gradually pour the wet ingredients into the dry ingredients; stir gently until just combined.
  5. Fold in half of the crushed candy canes before pouring the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack; top with remaining crushed candy canes while still warm.
