  • 1 cup fresh raspberries
  • 1 cup heavy cream, cold
  • 3/4 cup granulated sugar
  • 4 large eggs, separated
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a round cake pan.
  2. Melt dark chocolate in a heatproof bowl over simmering water until smooth.
  3. In a bowl, beat together sugar and egg yolks until pale, then mix in melted chocolate.
  4. Gently fold in cocoa powder and beaten egg whites until combined.
  5. Pour batter into the pan and bake for approximately 25 minutes. Let cool.
  6. Whip heavy cream until soft peaks form, then fold in remaining egg whites and vanilla extract.
  7. Add fresh raspberries to the mousse mixture.
  8. Layer half of the mousse on the cooled cake, add another layer of cake, and top with remaining mousse.
  9. Refrigerate for at least two hours before serving.
