- 2 cups fresh apple cider
- 2 medium yellow onions, chopped
- 3 large carrots, cut into chunks
- 4 garlic cloves, whole
- 2 cups low-sodium beef broth
- 10 fresh sage leaves
- 2 lbs Yukon Gold potatoes, peeled and quartered
- 4 tbsp unsalted butter
- 2 tbsp olive oil
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides for about 4-5 minutes each until browned.
- Add chopped onions and whole garlic cloves; sauté for about 3-4 minutes until softened.
- Pour in apple cider and beef broth until the meat is halfway submerged. Add carrot chunks and bring to a simmer.
- Cover and transfer to the oven; braise for 3 hours until fork-tender.
- In a separate pan, melt butter with chopped sage over medium heat. Add quartered potatoes and sauté until golden and crispy.
- After braising, mix crispy potatoes into the pot roast for an additional 30 minutes before serving.
