  • 8 oz fusilli pasta
  • 1 cup cherry tomatoes (halved)
  • 1 red bell pepper (diced)
  • 1 cup corn kernels (fresh or frozen)
  • 1 ripe avocado (diced)
  • 1/2 cup fresh cilantro (chopped)
  • 1/4 cup olive oil
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli pasta in salted boiling water according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. In a bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
