Description

Ingredients

Blondie Batter:

·         1 cup (2 sticks; 227 g) unsalted butter, melted

·         1 ¾ cups (350 g) light brown sugar (packed)

·         2 large eggs, room temperature

·         1 large egg yolk, room temperature

·         1 ½ tsp pure vanilla extract

·         2 ½ cups (285 g) all‑purpose flour

·         2 tsp corn starch

·         1 tsp baking powder

·         1 tsp kosher salt

Cinnamon Swirl Layer:

·         2 Tbsp unsalted butter, melted

·         ¼ cup (packed) light brown sugar

·         2 tsp ground cinnamons

Cream Cheese Frosting (Optional but irresistible):

·         3 oz cream cheese, softened

·         ¼ cup (½ stick; 57 g) unsalted butter, softened

·         1 ½ cups (188 g) confectioners’ sugar, sifted

·         1 tsp pure vanilla extract

·         Pinch kosher salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix melted butter with brown sugar and granulated sugar until smooth.
  3. Add eggs one at a time and stir in vanilla extract until fully combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. For the cinnamon swirl, combine sugar and cinnamon in a small bowl. Spread half of the batter in the prepared pan, sprinkle half of the cinnamon mixture on top, then add remaining batter and sprinkle with the rest of the mixture.
  7. Bake for 25-30 minutes or until golden brown; a toothpick should come out clean from the center.
  8. While cooling slightly, whisk together powdered sugar and milk for the glaze. Drizzle over warm blondies before serving.

Notes

·         Tin size: Ideal for 9×9″; you can use 8×8″ for thicker bars.

·         Melted butter in swirl layer helps the cinnamon-sugar fluidly meld into the batter.
