  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup whole milk (or almond milk)
  • 2 large eggs
  • 2 tbsp melted butter
  • 1/4 cup brown sugar
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon until well combined.
  2. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract until smooth. Gently combine with dry ingredients.
  3. In a small bowl, mix brown sugar and cinnamon for the filling; transfer to a piping bag.
  4. Preheat a griddle over medium heat; grease lightly. Pour 1/4 cup batter onto the griddle and swirl in the brown sugar mixture before bubbles form.
  5. Flip when edges are firm and cook until golden brown. Serve warm with maple syrup.
