- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 2 cups egg noodles
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Prep your ingredients: Wash and chop the veggies—dice the onions finely, slice the carrots into rounds, and chop the celery.
- Sauté aromatics: In a large pot over medium heat, add 1 tbsp olive oil. Sauté chopped onions and minced garlic until fragrant and translucent (about 3-4 minutes).
- Add chicken & veggies: Add chicken breasts, carrots, and celery to the pot. Stir for about 2 minutes until they start to soften.
- Pour in broth & seasoning: Add chicken broth along with thyme, bay leaves, salt, and pepper. Bring to a boil then reduce heat to simmer for 20-25 minutes.
- Add noodles & finish up: Remove cooked chicken from the pot and shred it using two forks. Return shredded chicken to the pot along with egg noodles; cook according to package instructions (7-10 minutes).
- Taste & adjust seasoning: Stir well and taste; adjust seasoning if necessary.
