  • 3 cups boneless, skinless chicken breasts (about 34 pieces)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 cups egg noodles
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and chop the veggies—dice the onions finely, slice the carrots into rounds, and chop the celery.
  2. Sauté aromatics: In a large pot over medium heat, add 1 tbsp olive oil. Sauté chopped onions and minced garlic until fragrant and translucent (about 3-4 minutes).
  3. Add chicken & veggies: Add chicken breasts, carrots, and celery to the pot. Stir for about 2 minutes until they start to soften.
  4. Pour in broth & seasoning: Add chicken broth along with thyme, bay leaves, salt, and pepper. Bring to a boil then reduce heat to simmer for 20-25 minutes.
  5. Add noodles & finish up: Remove cooked chicken from the pot and shred it using two forks. Return shredded chicken to the pot along with egg noodles; cook according to package instructions (7-10 minutes).
  6. Taste & adjust seasoning: Stir well and taste; adjust seasoning if necessary.
