  • 1 ½ cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped nuts (pecans or walnuts)
  • ½ cup unsweetened coconut flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream the butter with brown and granulated sugars until light and fluffy (3-4 minutes).
  4. Beat in eggs one at a time and add vanilla extract.
  5. Gradually combine dry ingredients into the butter mixture without overmixing.
  6. Fold in oats, chocolate chips, nuts, and coconut if using.
  7. Scoop dough onto prepared baking sheets about two inches apart.
  8. Bake for 10-12 minutes until edges are golden but centers are soft.
  9. Cool on sheets for five minutes before transferring to wire racks.
