Description

  • 3 cups boneless, skinless chicken breasts (diced)
  • 1 cup fresh carrots (diced)
  • 1 cup frozen peas
  • 1 medium yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 package puff pastry or pie crusts (thawed)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a skillet, cook diced chicken over medium heat until golden brown, about 6-7 minutes.
  3. Add chopped onion and minced garlic; cook until onions are translucent.
  4. Stir in diced carrots; cook for another 5 minutes.
  5. Pour in chicken broth and heavy cream; let simmer until slightly thickened, about 5 minutes.
  6. Season with thyme, rosemary, salt, and pepper; mix well.
  7. Transfer filling to the baking dish; cover with puff pastry or pie crust and cut slits for steam vents.
  8. Bake for 25-30 minutes until the crust is golden brown. Let cool slightly before serving.
