Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 ½ cups ditalini pasta
  • 1 cup baby spinach leaves
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Sausage:
    • Heat olive oil in a large pot over medium heat. Add the sausage, crumble it, and cook until browned. Remove excess grease if necessary.
  2. Sauté Aromatics:
    • Add diced onion and garlic to the pot. Cook until softened and fragrant, about 2-3 minutes.
  3. Simmer the Broth:
    • Stir in chicken broth, heavy cream, and Italian seasoning. Bring to a gentle simmer.
  4. Add Pasta:
    • Stir in the ditalini pasta and cook until tender, about 10 minutes.
  5. Finish with Spinach and Parmesan:
    • Stir in baby spinach and Parmesan cheese. Cook for another 2-3 minutes until the spinach wilts and the cheese melts.
  6. Season and Serve:
    • Taste and adjust seasoning with salt and pepper. Serve warm with extra Parmesan on top.

  • For a lighter version, use half-and-half instead of heavy cream.
