Ingredients
Scale
- 1 tbsp olive oil
- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 ½ cups ditalini pasta
- 1 cup baby spinach leaves
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the Sausage:
- Heat olive oil in a large pot over medium heat. Add the sausage, crumble it, and cook until browned. Remove excess grease if necessary.
- Sauté Aromatics:
- Add diced onion and garlic to the pot. Cook until softened and fragrant, about 2-3 minutes.
- Simmer the Broth:
- Stir in chicken broth, heavy cream, and Italian seasoning. Bring to a gentle simmer.
- Add Pasta:
- Stir in the ditalini pasta and cook until tender, about 10 minutes.
- Finish with Spinach and Parmesan:
- Stir in baby spinach and Parmesan cheese. Cook for another 2-3 minutes until the spinach wilts and the cheese melts.
- Season and Serve:
- Taste and adjust seasoning with salt and pepper. Serve warm with extra Parmesan on top.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Substitute kale for spinach if desired.
