- 1 cup orzo pasta
- 1 cup cottage cheese (full-fat or low-fat)
- 2 cups fresh spinach
- 1 cup cherry tomatoes (halved)
- 2 garlic cloves (minced)
- 2 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- Juice of ½ lemon
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add orzo pasta and cook according to package instructions until al dente. Drain and set aside.
- In a pan, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 30 seconds). Add fresh spinach and cook until wilted.
- Stir in halved cherry tomatoes and cook for about 3 minutes until softened.
- Add cooked orzo to the pan with spinach and tomatoes. Stir in cottage cheese, lemon juice, salt, pepper, and Parmesan until well combined.
