Ingredients

  • 2 cups cucumbers (sliced)
  • 1 cup avocado (diced, about 1 large avocado)
  • 1 cup broccoli florets (steamed)
  • 1/2 cup Greek yogurt (plain)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Wash all vegetables thoroughly. Slice cucumbers into thin rounds (ΒΌ inch thick).
  2. Steam broccoli florets for 3-4 minutes until bright green but crisp.
  3. In a bowl, whisk together Greek yogurt, lemon juice, garlic powder, salt, and pepper until smooth.
  4. In a large mixing bowl, combine sliced cucumbers, steamed broccoli, and diced avocado.
  5. Pour the dressing over the vegetables and gently fold until everything is coated.
  6. Cover and chill in the fridge for 30 minutes before serving.
