  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 3 cups vegetable broth

  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 2 cups fresh spinach

Instructions

  1. Rinse lentils under cool water until clear. Dice onions and mince garlic.

  3. Add rinsed lentils, cumin, turmeric, and paprika; sauté for 1-2 minutes until well coated.

  5. Cover partially and reduce heat to low; simmer for 25-30 minutes until lentils are tender.
