Ingredients
Scale
- 4 medium starchy potatoes (about 2 lbs), peeled and diced
- 3 medium leeks, cleaned and sliced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 2 tablespoons butter or olive oil
- Salt and pepper to taste
Instructions
- Prepare the potatoes by peeling and cutting them into even-sized cubes. Clean the leeks thoroughly to remove any dirt.
- In a large pot, heat butter or olive oil over medium heat. Sauté the sliced leeks until they soften, about 5 minutes.
- Add the diced potatoes and pour in the vegetable broth. Bring to a gentle boil.
- Reduce heat, cover, and let simmer for about 20 minutes, or until the potatoes are tender.
- Remove from heat and use an immersion blender to purée the soup until smooth. Alternatively, blend in batches using a traditional blender.
- Return the pot to low heat, stir in cream or coconut milk, and warm through without boiling.
- Season with salt and pepper before serving.
