  • 2 cups fresh corn kernels (about 2 ears)
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • Juice of 2 limes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 3/4 cup crumbled feta cheese
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. Grill fresh corn until charred, then cool before cutting off the kernels.
  3. In a bowl, mix mayonnaise, sour cream, lime juice, salt, pepper, and cayenne.
