  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop sun-dried tomatoes and mince garlic.
  2. In salted boiling water, cook penne until al dente. Reserve 1 cup of pasta water, then drain.
  3. Heat olive oil in a skillet over medium heat. Cook seasoned chicken for about 5-7 minutes per side until golden brown. Remove and let rest.
  4. In the same skillet, sauté garlic and sun-dried tomatoes until fragrant.
  5. Lower heat, add heavy cream, stirring constantly until slightly thickened.
  6. Slice chicken, return to the skillet with cooked penne and reserved pasta water. Stir in spinach until wilted.
