- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 8 oz penne pasta
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes (chopped)
- 2 cloves garlic (minced)
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop sun-dried tomatoes and mince garlic.
- In salted boiling water, cook penne until al dente. Reserve 1 cup of pasta water, then drain.
- Heat olive oil in a skillet over medium heat. Cook seasoned chicken for about 5-7 minutes per side until golden brown. Remove and let rest.
- In the same skillet, sauté garlic and sun-dried tomatoes until fragrant.
- Lower heat, add heavy cream, stirring constantly until slightly thickened.
- Slice chicken, return to the skillet with cooked penne and reserved pasta water. Stir in spinach until wilted.
