Ingredients

  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 2 tbsp olive oil
  • Salt, pepper, and Italian herbs to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut chicken breasts into even strips.
  3. In one bowl, whisk together eggs and a pinch of salt. In another bowl, combine panko breadcrumbs, parmesan cheese, minced garlic, and Italian herbs.
  4. Dip each chicken strip in the egg mixture then coat with the breadcrumb mixture. Press gently to adhere.
  5. Place coated strips on the baking sheet and drizzle with olive oil.
  6. Bake for 15-20 minutes until golden brown, flipping halfway for even crispiness.
