  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 3 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Pat chicken breasts dry with paper towels.
  2. Set up a breading station with three shallow dishes: one for seasoned flour, one for beaten eggs, and one for panko mixed with Parmesan.
  3. Coat each chicken breast in flour, then dip in egg, and finally coat with the breadcrumb mixture.
  4. In a skillet over medium heat, melt butter. Sear the chicken for about 5-6 minutes per side until golden brown and cooked through.
  5. Remove chicken from the skillet. In the same skillet, sauté minced garlic until fragrant. Stir in heavy cream and mix well.
  6. Add more grated Parmesan cheese to the sauce until melted and smooth. Drizzle over the crispy chicken before serving.
