Description

  • 2 medium zucchinis (about 1.5 cups grated)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis, then squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, mix the grated zucchini, eggs, breadcrumbs, garlic powder, salt, pepper, and half of the Parmesan until well combined.
  4. Form the mixture into patties about ½ inch thick and place them on the prepared baking sheet.
  5. Top each patty with the remaining Parmesan cheese.
  6. Bake for 20-25 minutes until golden brown and crispy.
  7. For extra crunch, heat olive oil in a skillet over medium-high heat and sear each patty for 1-2 minutes per side before serving.
