Description

Crispy Smashed Potato Salad is a delightful twist on traditional potato salad, combining the satisfying crunch of crispy potatoes with a creamy, zesty dressing. Ingredients

  • 2 lbs small Yukon Gold or red potatoes
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley or dill, chopped
  • 1/2 cup full-fat sour cream (or Greek yogurt)
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and halve the potatoes. Boil in salted water until fork-tender, about 15-20 minutes.
  3. Drain and cool slightly. On a parchment-lined baking sheet, gently smash each potato half with a fork.
  4. Brush with olive oil and sprinkle with salt and pepper.
  5. Bake for 25-30 minutes until golden and crispy.
  6. While baking, mix sour cream, Dijon mustard, herbs, salt, and pepper in a bowl.
  7. Toss warm potatoes in the dressing before serving.
