  • 1 cup brown or green lentils
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 cup bell peppers (diced, mixed colors)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onions until translucent (about 5 minutes), then add bell peppers.
  2. Stir in minced garlic and sauté for 1 minute until fragrant.
  3. Transfer the sautéed vegetables into the crock pot. Add lentils, diced tomatoes (with juices), vegetable broth, chili powder, cumin, salt, and pepper.
  4. Stir all ingredients until well combined.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until lentils are tender.
  6. Adjust seasoning if needed, then serve warm with your favorite toppings.
