  • 4 cloves fresh garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup unsalted butter
  • 1/4 cup fresh cilantro, chopped
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp garam masala
  • Salt to taste

Instructions

  1. Prepare your ingredients by chopping chicken into bite-sized pieces and mincing the garlic and ginger.
  2. In a pan over medium heat, melt butter and sauté chopped onions until translucent. Add garlic and ginger; sauté for about 2 minutes.
  3. Stir in cumin, coriander, and garam masala; cook for another 30 seconds until fragrant.
  4. Combine the sautéed mixture in a crockpot with chicken, crushed tomatoes, coconut milk, and salt. Mix thoroughly.
  5. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
