  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp tomato paste
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare your ingredients by finely chopping the onion and mincing the garlic and ginger.
  2. In a skillet over medium heat, add oil and sauté onions until translucent. Add garlic and ginger until fragrant.
  3. Stir in curry powder, cumin, coriander, and garam masala; toast for 1-2 minutes.
  4. Transfer the mixture to the crockpot; add chicken breasts, coconut milk, tomato paste, salt, and pepper.
  5. Cook on low for 6-8 hours or high for 4 hours until chicken is tender.
  6. Shred chicken in the pot using two forks; garnish with fresh cilantro before serving.
