- 2–3 tbsp ice water
- 8 oz dark chocolate (70% cocoa)
- 1/2 cup heavy cream
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Prepare the Tart Crust: Preheat the oven to 350°F (175°C). In a bowl, combine flour, cocoa powder, and sugar. Cut in cold butter until it resembles coarse crumbs. Add ice water gradually until dough forms.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Roll Out the Dough: On a floured surface, roll out the dough into a circle about 12 inches wide. Transfer to a tart pan and trim excess edges.
- Bake the Crust: Prick the bottom with a fork and bake for 15-20 minutes until firm. Cool completely.
- Make the Filling: In a saucepan over low heat, melt dark chocolate with heavy cream, stirring until smooth. Remove from heat and whisk in eggs and vanilla.
- Fill and Bake Again: Pour filling into cooled crust and bake at 350°F (175°C) for 25-30 minutes until slightly set but jiggly in the center.
- Cool before slicing and serve with whipped cream or fresh berries.
