- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce (adjust to taste)
- 4 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 green onions, finely sliced (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a large bowl, mix shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese until well combined.
- Stuff each bell pepper with the mixture, pressing down gently.
- Bake for 25-30 minutes until the peppers are tender and cheese is melted.
- Remove from the oven, sprinkle with green onions, and serve warm.
