    • 1 lb chicken breast, cubed
    • 2 cups fresh pineapple, cubed
    • 1 red bell pepper, cubed
    • 1 green bell pepper, cubed
    • 1 red onion, cubed
    • Skewers (wooden or metal)
  • For the Marinade:
    • 1/4 cup soy sauce
    • 1/4 cup pineapple juice
    • 2 tbsp honey
    • 1 tbsp olive oil
    • 2 garlic cloves, minced
    • 1 tsp ginger, grated
    • 1/4 tsp chili flakes (optional)


Instructions

  1. Prepare the Marinade:
    • In a bowl, whisk together soy sauce, pineapple juice, honey, olive oil, minced garlic, grated ginger, and chili flakes.
  2. Marinate the Chicken:
    • Add cubed chicken to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for best flavor).
  3. Assemble the Skewers:
    • Thread marinated chicken, pineapple, bell peppers, and red onion onto skewers, alternating ingredients for a colorful display.
  4. Grill the Skewers:
    • Preheat the grill to medium-high heat. Lightly oil the grates. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked (internal temp of 165°F).
  5. Serve:
    • Serve hot with a side of rice, salad, or your favorite dipping sauce.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • For an extra glaze, brush the skewers with leftover marinade during grilling.
