  • 1 cup Arborio rice
  • 2 cups lobster stock (homemade or store-bought)
  • 1/2 cup dry white wine
  • 1 cup cooked lobster meat, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and one tablespoon of butter in a large pan over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute.
  2. Add Arborio rice to the pan and stir continuously for about two minutes until lightly toasted.
  3. Pour in the white wine and let it simmer until absorbed. Gradually add lobster stock, one ladle at a time, stirring frequently until absorbed before adding more.
  4. After 18-20 minutes, when rice is al dente, fold in cooked lobster meat and remaining butter. Finish with Parmesan cheese, salt, and pepper to taste.
